Food with friends is one thing, but then add some fun in the sun and you have a good time made. This recipe can be called a taco, taquito, or anything you want it to be. I really don’t have a name?! Whatever you want to name it, it really doesn’t matter. In the end, it’s all about the food, fun, friends, and the fiesta.
An important part of this recipe is the sauce. You can either use a lime crema sauce or just make some guac to add on top. Here’s our guac recipe. This is especially good with garden fresh garlic, onions, and herbs.
Your List For The Store
- Corn tortillas
- Olive oil
- Beef
- Onion (yellow and green for garnish)
- Peppers in adobo sauce (diced very small and use little unless you like a lot of kick)
- 1/2 cup enchilada sauce
- Cheese if you use dairy
- Herbs (cilantro, oregano, basil)
- Toppings (salsa verde, guac, pico, mango salsa, lettuce, etc.) I like the mango salsa at Sam’s Club or Costco for a quick time saver
Let’s Make Some Food
Preheat your oven to 425. In a fry pan, heat up 2 tbsp olive oil and brown your meat and one chopped onion. Season with salt and pepper. After meat is browned, add the enchilada sauce and peppers. Simmer a few minutes until thickened. If you need to add a little water, you can. Remove from heat. Warm tortillas up in your microwave. I usually wrap them between two damp paper towels for about 30 seconds or until they seem soft. Take out and rub each tortilla with olive oil. Add a little of the beef mixture to each one. Next, add your cheese. Roll them up as tight as you can without ripping them and place the seam side down on a baking sheet.
Bake about 6 minutes per side or until each side is browned. I don’t use cheese (dairy free) but if you do, look to see if cheese is melted. Take them out and plate them on a long serving platter and finally, add all the extra toppings (guac, salsa, herbs, etc). YUM!
