Yum Yum Chicken and Rice [Gluten and Dairy Free]

Yum Yum Chicken and Rice was made by accident one day. You know how it is. It’s time for dinner and you look in the fridge with that WTH face. If it’s grocery day, I’m good to go. However, if it’s the end of the week and groceries are running low, that’s when “the face” happens.

I usually have the basics on hand…rice, potatoes, chicken, hamburger, onions and peppers. I have learned how to make a meal with what’s left in the fridge and this was how Yum Yum Chicken and Rice came to be our new favorite meal. Mix and match and create a yummy meal that’s pretty healthy.

Ingredients – Don’t Forget the Yum Yum

  • Chicken Breasts (2-3)
  • Minute Rice (1.5 Cup)
  • Two Peppers
  • One Sweet Onion
  • Spicy Olive Oil (I like a chili pepper oil)
  • Salt, Pepper, and Garlic Powder
  • Yum Yum Sauce (you can make it homemade or just use Terry Ho’s The Original)*
  • Chopped Cilantro/Green Onion for topping

Directions for Chicken and Rice

Prepare your chicken breast with salt, pepper, and garlic powder. I add my olive oil to both sides of the breast, but you can just pour a couple tablespoons in the cast iron skillet if you wish.  Saute your chicken breast, each side about 4-5 minutes and let it rest.  Add more olive (or avocado oil) to a pan and add sliced peppers and onions.  Saute for about 5 minutes or to your liking.  We like it very done, almost black.  Add salt and pepper. Cook your minute rice. Follow directions on the box.  Add some spicy oil to rice after it’s done. About half a tablespoon. 

Put rice in a serving bowl and pour on some yum yum sauce.  Add peppers/onions on top of rice. Next, layer in sliced chicken breast. Top with green onion and cilantro and finish off with more yum yum sauce.  I could eat this every day!  Dairy and gluten free.  Serves 2-3. 

Homemade Yum Yum on the fly: 1/2 cup of mayo, squirt of tomato paste, 1/2 tbsp of garlic powder, teaspoon of onion powder, 1/2 tbsp paprika, 1 tbsp white sugar, and a small squirt of ketchup. Mix together. Can add a little hot sauce if you like heat.
