Low Carb PF Chang [Copy Cat] Lettuce Wraps

Who doesn’t want a Low Carb Lettuce Wrap recipe that is healthy and quick? This copy cat PF Chang Low Carb Lettuce Wrap recipe does just that. I almost always have a rotisserie chicken in my fridge because there are so many things you can make with chicken! My daughter likes this recipe, but my son, not so much. He’s not much of a veggie eater yet and doesn’t sway too much out of his box.

My friend shares a lot of the same eating habits as I do, so I got this recipe from her. Thanks Paula! And she got it from Chef Savvy who adapted it from Damn Delicious. With this many reposts, it’s got to be a winner, right? On my first try months ago, it was a hit! Yahoo! I didn’t change a lot from the recipe, just a tweak here or there to make it my own.

Ingredients:

  • 1 tbsp oil (I use avocado typically)
  • 1 roasted chicken cut up
  • 3 cloves of garlic minced
  • 2 tsp ginger
  • 1 tsp sesame oil
  • 1/4 cup hoisin (be aware there is gluten in hoisin sauce, so opt for a gluten free version if you want)
  • 1 tbsp rice vinegar
  • 1 tbsp or less sriracha
  • Head butter lettuce (this has a large leaf area so you can fill the cups better)

Directions:

Heat oil on medium low heat and add the shredded chicken. Mix sesame oil, hoisin sauce, vinegar, and sriracha in a small bowl and set aside. Add garlic and ginger to skillet and cook for 1-2 minutes. Stir in sauce and simmer 2-3 minutes until thickened. Serve immediately into lettuce cups (butter lettuce leaves torn off individually) and add some sesame seeds on top.
