Whole 30 Spicy Ground Pork with Ginger

If you’ve ever done the Whole 30, you know that you are slaving away in the kitchen, all day, every day! Well maybe not all day, but you are there for a long time. It might be the worst part of the whole process….well truthfully cutting out sugar was pretty tough too. You might also know that in those first two weeks it’s best you stay in your house so that you aren’t triggered by all of those foods you’re trying so hard to avoid.

Whole 30 Liquid Gold

I discovered that Coconut Aminos is a must-have. I used it on everything and I still do. What I found after completing the 30 days was that I really didn’t miss many of those things at all. I’ve completely cut dairy, gluten and soy.  In addition to not missing these foods, I also found that I am in fact allergic to dairy and sensitive to gluten and soy.

In reality, the Whole 30 is more than losing a little weight. It provides a great opportunity to eliminate foods that may be causing your body distress that you didn’t even realize were an issue. It will give you a great reset to living a more healthful way of eating and what really works best for your body by becoming in tune to sensitivities to certain foods.

Ingredients

  • 1 lb of organic ground pork
  • Cilantro (optional)
  • Basil (optional)
  • Green onions (about 3)
  • Romaine Lettuce
  • 2 Tbsp of Sesame Seed Oil
  • 1 Tbsp of Freshly grated ginger (or less if you’d like)
  • 1 or 2 garlic cloves (or 1 tsp of garlic salt)
  • 1/4 to 1/2 tsp of Red Pepper Flakes. We like the heat so I go with 1/2.
  • 2 to 2 1/2 Tbsp of Coconut Aminos.

How to prepare:

First, fry the ground pork until cooked. Then add all of the spices, basil, cilantro and two green onions, along with the coconut aminos. Let simmer for about 5 minutes. It’s optional to add the cilantro and basil. Add one or both at the end and toss and let simmer for another two minutes.

Let the mixture cool a bit before adding it to your romaine lettuce.

I based this recipe off the Asian Pork recipe in the Whole 30 book. Since I wasn’t a fan of Fish Sauce, I continued to modify until it morphed into something a little different. There are many similar variations out there. This here is one of my weekly favorites. It’s great for leftovers and we know that leftovers are a bonus. Make it easy on yourself and double the recipe so you have lunch for the next two days.
