3 Ingredients Papaya Chicken

This is so super easy with just three ingredients! For lack of a better name, I call it 3 Ingredients Papaya Chicken. I was inspired by a place that we have lunch near the beach. Brandi had a Chicken Poppy Seed Pasta that we posted awhile back with poppy seed dressing and shell pasta. It’s such a quick and easy side dish to throw together! I had left over chicken one day so I decided to add some poppy seed dressing to it and top it on a papaya. Yum!

  • 1 Papaya
  • Shredded rotisserie chicken
  • About a 1/4 cup of poppy seed dressing
  • Optional top with green onions

Add the dressing to the chicken. Stir and I like to refrigerate over night. Serve on top of the papaya. Can it get any easier than that? That’s my kind of recipe! 3 Ingredients Papaya Chicken is such a refreshing summer lunch. I can’t get enough right now! I’m always experimenting with fruits and veggies for summer salads. But sometimes I need more inspiration, so I look to Eat Well.
