Zuppa Toscana {Whole 30, Gluten Free, Dairy Free}

Happy 2021!!! I hope you all had a happy and safe New Years Eve! We stayed in for a quiet night at home.  I had a chance to organize my thoughts and goals for the New Year ahead while also reflecting on the past year. Crossing fingers this will be a good year, a better year than 2020 was! I woke up feeling ready to tackle DAY 1 of our New 30 Day Joy Challenge! If you haven’t joined our private group yet, now is the time. We have such a fun and supportive group that make the challenge so worth it. I look forward to checking in each day to log our workouts. In addition to our monthly challenge, I decided to do another Whole 30. I’m already gluten free and dairy free. Sugar free? I am not. The Zuppa Toscana might be one of my favorite go-to recipes. One of the things that I don’t love about the whole process is that you’re constantly cooking because….no processed foods! I usually double this recipe so I can have a few days worth of lunch as well.

Ingredients

  • 1 lb spicy Italian sausage
  • About 4 to 6 slices of Applegate (Whole 30 Compliant Bacon)
  • 4 russet potatoes
  • 1 yellow onion
  • 2 large handfuls of spinach or kale
  • 1 – 32oz of organic Chicken Bone Broth
  • 2 tbsp garlic
  • 1 tsp Garlic powder
  • 1 tsp Paprika
  • 1 tsp Cayenne Pepper
  • 1 tsp Fennel
  • 1 tsp Salt
  • 1 tsp Oregano
  • 1 tsp fennel
  • 1 Can of Coconut Milk full fat

Instructions

Start to brown the Italian sausage. Chop onion and add to the Italian sausage. Once browned add the Chicken Bone Broth along with the diced potatoes and all the spices. Bring to a boil for about 10 to 15 minutes or until the potatoes are tender. In the meantime brown the package of bacon. Reduce the heat then add a can of Coconut milk stir and heat thoroughly. At the very end add either kale or spinach. Stir until the spinach or kale turns a brighter green. I add the crispy crumbled bacon at the very end.
