Tzatziki Whole 30 to Paleo

Last year my husband and I embarked on the Whole 30 plan after New Years Eve. It was quite the eye opening journey for both of us. Food really can heal or hurt you. We have the stats to prove it. The point was never to lose weight, but it was a 100% reset because we knew how crappy we had been eating leading up to Day 1 of Whole 30. The weight loss was a bonus in our book.

Since our first Whole 30 we’ve managed to stick to this style of eating with a few modifications. After we completed the 30 days we transitioned our diet to Paleo. I consider it a lifestyle change, not a diet. When I go outside of it, I can always feel the difference both physically and mentally.  We’ve kept the basics of  no dairy, gluten free and limited processed food.

This recipe can be either Paleo or Whole 30 with a noted modification below. The downfall of sticking to it for 30 days is that you’ll be cooking 3 times per day, every day. Yep, that is ninety meals in 30 days unless you really plan out those leftovers. With a good system for meal prep in place this can become a breeze. You’ll find your favorites and then it becomes a no-brainer. This was one of our favorite go-to’s that would last at least two days. With a few minor alterations this can be prepared for Whole 30 or Paleo.

Tzatziki Ingredients:

  • 1 cup Sir Kensington’s Mayo (Paleo). For whole 30 Modify this ingredient to Primal Kitchen Avocado Oil Mayo or Chosen Foods Avocado Oil Mayo. Sir Kensington’s is NOT Whole 30 compliant, but it is Paleo
  • 2 tsp juice of a lemon
  • 2 cucumbers using 1.5 for shredding cucumber, thin slices to top for the other half
  • 1/2 cup of radishes (about 5 small radishes) I slice two small radishes to top at the end
  • 1/2 a red onion
  • About 1 clove of garlic- I do slightly more
  • 1 pkg of cucumber dill Gourmet Dip mix (vegan, paleo, gluten free) Read the labels for one that is compliant

Directions:

Add mayo and lemon juice to a medium bowl. Whisk it until it’s combined. Shred the 1.5 cucumbers and roughly about 5 small radishes. Add the dip mix with salt. Thoroughly mix all of the ingredients together. Slice up half a cucumber, 2 small radishes and half a red onion. Then top on your meat.

 The Whole 30 book uses a pork shoulder. But usually I’ll  fry up boneless sirloin diced pork in a little olive oil which is a big time saver. It can be topped on chicken, beef or pork as well.
