Taco Bake {Whole 30, Gluten Free, Dairy Free}

I’ve been dairy free and gluten free for awhile and have learned to live without some of my favorites. But one of the things I really missed was cheese in my taco bake, until I found this one at The Bettered Blondie. She has tons of Whole 30, gluten free and dairy free recipes.

Ingredients

  • 1 lb organic hamburger
  • 1 bag of frozen cauliflower
  • 1 green pepper
  • 1 red onion
  • Hand full of Cilantro
  • 1 Avocado
  • 1 can organic diced onions
  • 1 can of green chilies
  • 1/2 can of Jalapenos (or more if you like the heat)
  • 1 can of olives
  • 2-3 Tbsp Chili Powder
  • 1 tsp garlic powder
  • 1 tsp Cayenne pepper ( a little less if you don’t like it as spicy)
  • 1 tsp Paprika
  • 1/2 tsp salt
  • 2 Tbsp of Avocado Oil or Olive Oil. I prefer Avocado for this recipe.
  • 2 Tbsp of organic tomato paste

How to Prepare

Pre-heat oven to 300 degrees.

Heat 2 Tbsp of Avocado or Olive Oil. Chop onion, and green pepper, throw in some garlic. Heat for about five minutes. Then add your hamburger. I mix all the spices together. Chili powder, cayenne, paprika, salt, garlic then add to the hamburger. When the hamburger is cooked add the frozen cauliflower along with the green chilies plus two Tbsp of tomato paste. Mix well. Then beat two eggs and combine in the hamburger mixture. Add the entire mixture to a baking casserole and bake at 300 for 30 minutes.

Toppings

After taking it out of the oven I let it cool for about 5 minutes then add the Avocado, red onion, green onion, olives, chopped tomatoes and cilantro.

This is one of those recipes you can really add anything to the top or to the mixture for that matter. Kind of like your favorite nachos. The cauliflower really stretches the dish so its nice for leftovers the next day as well.
