Simple Whole 30 Egg Bake

We have another recipe for those of you on the Whole 30 or living the Paleo lifestyle. This one is so super easy and you can really change any of the vegetables and meats up to your liking.

In order to stay on track while I was on the Whole 30, I would always make this at the beginning of the week. For  a few reasons, really. The first reason being because the start of the week is always the hardest for us. The commitments seem endless being a family of four. So that means, late nights back home and it also means that we don’t feel like cooking at all. Which also can trigger a Whole 30 fail by grabbing some fast food. The other advantage to making a dish like this is that you can slice a piece in the morning when you’re in a rush.

Ingredients:

  • 1 (8oz.) pkg of Whole 30 approved bacon. I use Applegate Naturals
  • 2 large sweet white potato (you can use regular)
  • 1 tbsp olive oil for sweet potatoes cut into chunks
  • 2 cups of Broccoli
  • 1 white onion diced
  • 12 eggs
  • 1/3 cup Coconut Milk
  • Salt and Pepper to taste
  • Bragg Premium Nutritional Yeast Seasoning about 1/4 or 1/2 cup

Instructions:

Pre-heat the oven to 425 degrees. Grease a 9×13 casserole dish with coconut oil or ghee.

Prepare the bacon, put to the side.  Add onions to the bacon fat until slightly caramelized.

Add the sweet potatoes and broccoli, and then mix with coconut oil and salt and pepper. Roast for 30 minutes.

Whisk eggs, coconut milk and nutritional yeast together.

Turn the oven down to 400. Assemble the casserole. Layer sweet potatoes, broccoli, onion and bacon. Add the egg mixture over the entire casserole. Bake in the oven for an additional 25 minutes.

Let it cool before serving!
