Mexican Corn Tostadas

Sometimes the Gluten free options are not the same. Especially when it comes to favorite Mexican dishes like Enchiladas. I do have a tip for those ewwy,  gooey (not in a good way), messy soft shelled tortillas that I’ll save for another day. Today I wanted to share my new favorite Tostadas by Guerrero. They’ve quickly become my favorite go-to and the kids love them so score! I found a similar recipe to this on Pinterest so I decided to swap out a few ingredients for gluten free and dairy free options.

Mexican Corn Tostada {Dairy Free and Gluten Free}

Guerrero Tostadas (Gluten Free)
1 Can of corn
1 Can refried beans
1/4 Cup chopped red onion
Chopped cilantro
1/4 Cup Sir Kensington’s Avocado Mayo (wish is also dairy free and gluten free)
Sprinkle with Mexican shredded cheese (I use Daiya dairy free cheese)
Pinch of chili powder (optional)
Sprinkle with salt

Add onion, mayo, cheese, and cilantro to the can of corn with a dash of salt and chili powder. Mix well. Add a layer of refried beans to each Tostada. Then top each with the corn mixture. I heat them slightly on 300 degrees for about five minutes until the cheese melts.
