We want to guac your world with our newest recipe, Avocado Stuffed Chicken Breast, which we made gluten and dairy free. It’s basically our guacamole recipe stuffed in a chicken breast surrounded with bacon. It’s mostly healthy, minus the bacon part, but that’s what gives it more flavor. A little dab won’t hurt us, right? We have to have some fun in our life.
I usually double the avocado (guac) recipe so I have extra to spread on toast or for chip dipping. If you have some Everything But The Bagel seasoning, feel free to add this as well. It gives it that little extra punch that every taste bud loves. This is an easy recipe to make for a group and it looks great on display. Your friends and family will think you slaved in the kitchen all day. So, let’s get started!

2 Chicken Breasts Butterflied
2 Avocados
1/2 White Onion Chopped Fine
2 Garlic Cloves Chopped
Pinch of Red Pepper Flakes
One Lime
1 Diced Roma Tomato
Small Handful Chopped Fresh Cilantro
Salt/Pepper
2 Slices of Bacon
Let’s Get Stuffed
Butterfly your chicken breasts and season with salt and pepper. In a separate bowl, add the avocados, onion, garlic, pepper flakes, salt, pepper, tomato, cilantro, and squeezed lime. Mix together with a fork. Add to middle of butterflied chicken and rollup. Secure with a toothpick if needed. Wrap each breast with a bacon slice (two if you want more bacon). Warm oil in a pan and add chicken. Fry about 3-4 minutes each side or until bacon looks done. Transfer to a 400 degree oven for about 10 minutes to finish cooking the chicken. Delicious!
This avocado stuffed chicken in dairy free, but that doesn’t mean you need to keep it that way. If you are a cheese lover, add some shredded cheese before you roll up the breast. That would be delicious! Also, if it doesn’t want to stay together, feel free to use a toothpick to hold it together. Be careful with frying though if you do that. Enjoy!
