Vegan Wrap Recipe – Spice up your Meal Today

If you’re not sure what to make for lunch or for a quick and easy dinner, turn to this vegan wrap recipe. If you’re like me, it’s a constant battle to know what to cook. We eat a dairy free, mostly gluten free diet, so that adds a little extra pressure. I usually have peppers and onions on hand, which can be a great filler when you don’t know what to make. I started by just making peppers and onions as a side dish. One day, I didn’t have anything else planned (grocery day) and needed a little more substance for my meal, so I decided to try the veggies on a tortilla wrap.  Many companies make a gluten free tortilla now, like Old El Paso, which are really quite delicious.

How To Make It:

First, wash 2-3 peppers and cut lengthwise. Remove the seeds and the ribs of the peppers. Second, dice one yellow onion (use more if you like). Add a tablespoon of avocado oil to your skillet and place your onion and peppers in the pan. I like to add another tablespoon of oil on top. For my skillet, I like to use cast iron for almost everything (unless it is something sticky or delicate, like eggs). To find out more about cooking with cast iron, click here. Saute your onions and peppers for about 10-12 minutes, stirring occasionally. They are done when they start to soften up. You can also throw in a clove or two of garlic during the last minute or less of cooking for added flavor, but watch to make sure your garlic does not burn, as this will ruin the flavor of the dish. Add salt and pepper.

Next, I like to add a little bit more oil (half a tablespoon or less) to a clean skillet and warm my tortilla’s for about 30 seconds on each side. This will add more flavor to the wrap, as well as soften the tortilla. Add your peppers and onions to the tortilla, along with any other extra toppings of your choice. I like to add my homemade guacamole, see recipe here, and some hot sauce. Finally, fold both edges of the tortilla inward and roll up starting at the bottom for a quick, easy, and healthy lunch. Every pepper starts out as a green pepper.  The longer the pepper stays on the vine, the riper it becomes.  The riper the pepper is, the sweeter it is and also more nutritious. There are certain varieties that will stay green, so you have to check which one you are using.
