Feeling pressed for time when preparing a quick summer lunch? Me? Always. The best way for me to stay on track and not head for the snack drawer for junk food is to have avocados, grapes, strawberries, onions and salad on hand at all times. We think preparing healthier options is a hassle but really it’s not as long as you plan ahead.
One of my favorite ways to make a salad is mixing up fruits and veggies. I recently found this Organic Poppy Seed dressing that I’ve been loving. It’s such a perfect addition to this combination and it can satisfy a sweet tooth.
Ingredients
- Arugula salad is my favorite to use with this combination
- Cut half an Avocado
- Handful of cut strawberries
- Slices of red onion
- Slivered almonds
- If you are a cheese lover add some Feta
- Grilled slices of chicken is also great with this combo
