Slow Cooker Apple Cider [Whole 30] Pork

When it comes to spending any time in the kitchen cooking the first thing I gravitate towards is something easy.  As soon as I saw Whole 30 Fast and Easy it immediately grabbed my attention. Outside of this book, I relied on reading about it on-line initially.

The Whole 30 Fast & Easy has tons of great recipes that will leave you feeling very satisfied. You aren’t going to starve for sure. I’ve managed to stick to these guidelines on my regular meal plans. Given our sensitives to gluten, dairy and soy the recipes are perfect for us.

The Slow-Cooker Apple-Cider Pulled Pork was a simple go-to on those busy days. Not to mention you probably already have most of the ingredients in your pantry.

Ingredients

  • 1 Tbsp Salt
  • 1 1/2 tsp smoked paprika (I use regular)
  • 1 1/2 tsp garlic powder
  • 1/2 tsp chili powder (I like the heat so I throw a little extra in)
  • 1/2 tsp ground ginger
  • 1/2 tsp ground pepper
  • 4 lb boneless pork butt
  • 1 large sweet onion sliced
  • 1 1/2 cups of unsweetened unfiltered apple cider.
  • 4 baked potatoes

Instructions

Make the rub by combining all of the seasonings in a small bowl. Rub over the pork with fingers. Throw the onions in the bottom of the slow cooker. Place the pork butt on top then cover with the apple cider. Easy!

Cover and cook over low for 8 to 10 hours or high for 6 to 7.

Remove and transfer to a large platter, allow it to rest. Let the liquid run through a strainer then add one cup back to the slowcooker. Shred with a fork then add the meat back to one cup of the liquid.

Serve on top of a baked potato and top with Jalapeno peppers for some spice.

  • Day 1- Didn’t notice any difference.
  • Day 2- Nothing changed.
  • Day 3- Massive headache like a hangover headache.
  • Day 4- Still had a hangover AND felt pretty moody. Peeing every 5 minutes….I definitely lost some water weight.
  • Day 5- Headache is finally gone. Feeling moody but better. Also feeling more energy.
  • Day 6- Overall I haven’t experienced any sugar cravings from Day 1-6. Felt very tired though.
  • Day 7- Just had my first craving for chocolate today. It passed relatively quickly though. I had a quick burst of energy in the morning and then I was tired for the rest of the day.
