This yummy corn chowder for the crockpot is great to serve as a meal or as a side dish in smaller bowls. It’s also just as good the next day. We usually serve it as our main meal with a side of bread for dipping. If you are really feeling motivated, try making your own easy buns.
Corn Chowder Ingredients:
- 1 can creamed corn
- 1 can whole corn
- 1/2 bag carrots
- 2 pounds diced potatoes
- 1 can full fat coconut milk
- 3 cups chicken stock
- 1 yellow onion chopped
- 3 cloves garlic
- 2 tbsp gluten free flour
- 2 cooked chicken breasts (chopped) or one roasted chicken cut up
- A pinch of thyme, rosemary, paprika, and parsley for garnish
- Salt and pepper
Easy Crockpot Directions:
Add corn, carrots, potatoes, milk, 2 cups of chicken stock, and chicken to crockpot. Fry onion and garlic in some oil. After browned, add flour and 1 cup of the chicken stock and whisk together. Add to crock pot. Mix together. Put on high for 4 hours or low 8 hours. This easy corn chowder crockpot recipe is easy and delicious!
My family loves this recipe. There are several things you can add for even more flavor. Try bacon, green onions, chopped green chiles, mixed veggies, and more. You also can add more chicken stock to your liking. Sometimes we like thicker soup and sometimes we don’t 🙂 There’s no specific recipe. Just throw what you like in there and have some fun!
