Happy Cinco de Mayo! I don’t know about you but getting groceries these days has been a challenge. Since it’s not a good idea to search several stores for that one recipe, I’ve had to improvise….A LOT! But really how hard can it be to make enchiladas work? My regular grocery store either has hamburger and no veggies or vice versa. So today, I threw this together with what I had. I prefer topping with lettuce and some olives but hey we are in the middle of a pandemic. Get what you get, right? If you’re like me with limited ingredients maybe you already have a few of these things so you can throw together a quick Cinco de Mayo feast.
Ingredients
- 1 lb hamburger, or chicken works too!
- 2 cups of shredded cheese (cheese is cheese…throw in whatever you have)
- Soft flour tortilla
- Packet of taco seasoning (again whatever kind you have)
- Enchilada Sauce (the green chili enchilada sauce is not my favorite for this recipe but it works…you just need something to melt that delicious cheese to)
- Top with salsa and sour cream
Fry hamburger, add seasoning and about 1/4 cup of water. Let simmer for about 10 minutes. I let the hamburger cool slightly then add to the soft shell tortilla along with cheese. Pour the enchilada sauce over the enchiladas then add the remaining cheese. Place in the oven at 400 until the cheese melts evenly. About 10 minutes.
