After a summer filled with not the best choices in meals, I’ve been craving all things healthy. Especially since we’ve been in quarantine for almost 14 days and all we’ve eaten are processed foods. This is one of my favorite feel good salads.
- 1 can chickpeas/garbanzo beans rinsed and drained.
- 2 avocados diced
- I went a little heavy on the green onions because I love them so much about a 1/4 cup.
- 1/3 Cup Feta (I also sprinkled a little more on top of my dish once it was served.
- 1/3 Cup Cilantro
- Juice of 1 lime
- Salt and Pepper
Throw all ingredients in a bowl and stir it up! Easy and delish!
