Easy Energy Bites No Bake

Welcome to my world of the easiest recipe for energy bites no bake protein balls. It will make you the most delicious cookie. Ok, ok. They are not cookies, but seriously, these taste as good as a cookie! I’m telling you. Even my son loves them and if you have been reading my previous posts; we like to call him Mr. Picky. It’s an age thing most of the time. When I was a kid, you would not have caught me dead eating what I eat now. My diet consisted solely of canned cranberries (no, I’m not joking) and cheesy breadsticks. Today, I don’t eat either. I would hide the yucky vegetables in my sock so I could leave the dinner table. Again, not joking.

Ingredients:

  • 3 C Oatmeal
  • 1 Tsp Vanilla
  • 1 C Peanut Butter
  • 2/3 C Honey
  • Extras (cacao nibs, M&Ms, chocolate chips, heath bites, shredded coconut. flax seed, chia seed, etc)

Directions:

This is the hard part. Just kidding. It’s so easy! Just dump all the ingredients in a bowl and stir. I place them in the fridge for about 15 minutes before I roll them into balls. They aren’t so sticky that way. You can also spoon bite size portions onto waxed paper and then throw them in the fridge. That way when you take them out, they are already pre-formed and you just have to tighten them (pretty them) up a bit. I actually like the latter way better, but it’s up to you.

Edible Ideas:

Pre or Post Work Out: Healthy, full of protein, portable, and gives you energy. Here is a list of 30 high protein snacks that are healthy and portable. Since they are full of protein, they will keep you fuller longer as well.

After School Snack: Believe me when I say, your kids are going to love these. As shown above, you don’t have to make them totally healthy if you don’t want to. Throw in some M&Ms, Reese’s Pieces, chocolate chips (I use the dairy free chips), or whatever your heart desires. You can even throw a ripe banana in there.

Kids Sporting Events: This is a great snack to serve kids before or after their sporting event. If you are in charge of the snack that day, this will be something different and they will love it.

Hubby’s Lunch Box (or your own): My husband farms, so he needs a lot of calories to get through his day. This is a perfect snack for him until he gets home for the night.

Entertaining: Don’t kid yourself. These even work great on the dessert table! Believe me when I say, people will be asking for your recipe.

Other Tips:

They do not need to be refrigerated, but I like to keep mine cool. I think they taste better and it ensures they don’t get too soft.

Make an extra batch and freeze them.

Spray your measuring cup with cooking spray before you put peanut butter or honey in them. It will slide out a lot better.

Don’t use a blender. That would cause such a mess. Just mix with a spoon.

Half the recipe if you don’t want as many. This will make up to about 20 balls depending on how big you make them.
