It’s only the beginning of August and I’m already feeling the summer winding down to a halt. That means we are getting ready for school to start and the chaos to begin. There are no shortage of beginning of school group gatherings to attend so this has been my go-to lately. In part because these just happened to be the ingredients I have on hand regularly. No brainer! Do you have an end of summer BBQ to attend? If so, this is a quick and easy salad to throw together last minute.
Ingredients
- Kale
- Red Onions
- Cherry tomatoes (optional)
- Cranraisins
- Feta
- 3 Tbsp Red wine vinegar
- 3 Tbsp extra virgin olive oil
- pinch of sugar
- 1/2 a juiced lemon
Chop up the Kale, red onions, cut cherry tomatoes in half. Toss all ingredients together sprinkle feta and cranraisins on top.
Next, whisk together 3 tbsps of red wine vinegar, 3 tbsp extra virgin olive oil and the juice of half a lemon. Voila! Easy!
